The BEST Chili Recipe

Hey y’all! Fall is officially here and I couldn’t be happier.

I love when the weather cools down and I can finally start making comforting foods like soups and chili… Today I wanted to share my go-to chili recipe that will definitely be on repeat ALL fall and winter!

This recipe is technically my mom’s… but I’ve asked permission to share it : )


  1. Heat a large pot on medium heat. Brown the ground beef and break up as it cooks.
    I use this chopper, but you can use a large wooden spoon!

  2. Once the meat is cooked through, add the seasoning packets. Stir well, and let it heat through. I like to do this so the seasonings can warm up and really melt into the meat!

  3. Add the beans and tomatoes, stopping between each can to stir well.

  4. Cover and cook the chili for at least 30 minutes, but the longer the better! I actually think chili is best made a day ahead of time because the longer it sits, the more the flavors really develop!

Instant Pot Directions:

Turn on the saute setting on your instant pot. Cook the ground beef, breaking up as it browns. Add spices and mix well. Add the beans & tomatoes and stir well. Cover and cook 20 minutes on High. Natural Release.

Slow Cooker Directions:

Brown the ground beef in a pan on medium heat, breaking up as it browns.

Add cooked meat to the slow cooker. Sprinkle seasoning packets on top of meat and then pour in beans & tomatoes. Stir well, and cook on Low for 8 hours.

Recipe Round Up: September 2019

I absolutely love to cook (and eat!), but sometimes I get in a recipe funk. I want to try new things, but everything looks too complicated or boring or just plain gross. I think we all feel like this from time to time! This past month I challenged myself to try some new recipes — and bring out some of my old favorties — and I have been so happy with the results! And B and Bryant haven’t complained either : )

Today I decided to share some of the new recipes I’ve tried this month just in case YOU and your family are in a similar funk! Hope you all enjoy!


Oven Baked

Chicken & Potatoes

This was an easy one pan meal! I used chicken thighs instead of drumsticks and it was so delicious! I served these with a simple salad on the side.

This was a big hit in our house and will definitely be on repeat all season…


Tomato Glazed

We love meatloaf around the Harpe household, and I love trying new variations. This recipe make little mini-loaves which I thought were so cute!

I served these with mashed potatoes and asparagus. So good!


Mac & Cheese

This soup literally tasted like macaroni and cheese in soup form. This was a great option for “Meatless Monday” and I loved that it had hidden veggies (butternut squash) in the cheese sauce. You seriously couldn’t taste them at all! But it felt good to know they were in there with all the cheese :)


Chicken & White Bean

This is an oldie but a goodie! I have made this recipe for years and it is my absolute favorite enchilada recipe.

I make Mexican food every Tuesday for Taco Tuesday, but it’s not always tacos! I love enchiladas, fajitas,and burritos too. These are sooo good and I think kids would even love them!


Creamy Tomato Soup
with Tortellini

This soup gets all the heart eyes from me!

It’s still 95 degrees here in Georgia, but I am protesting and still making soup. This was so creamy and just like a hug in a bowl.


Sweet ‘n Spicy
Asian Glazed

This is a good recipe if you are looking for something different! This was similar to barbecue sauce, but had just a hint of an Asian flair to it!

Pork Tenderloins

I have used this recipe FOR YEARS.

It is a go-to when we have friends over for dinner and it’s so easy, but tastes like it cooked all day!

I usually serve this with mashed potatoes and asparagus! So good.


One-Pot Spaghetti
& Meat Sauce

I love anything that is one pot; Less dishes!

This is so simple and easy. The noodles cook right in the sauce, so no boiling and draining noodles!

I usually serve this with a basic Caesar salad and it’s a crowed pleaser!

Mondays are a “Restart” Button


Since getting sick last weekend, I’ve been going a little overboard with junk food. What is it about being sick that makes you just want to eat anything and everything? It was fun while it lasted but last night I felt like a gross beast, so today I committed to getting back on the healthy train. 

I woke up and ate a big breakfast ready to take on the day. I had a goal of not eating any junk food or candy today and I was successful. I feel better already!

I went to the gym after work and I’m so exhausted now, but it was worth it. 


My Monday workout. I created this myself last fall and have really been enjoying it so far.


For dinner I made a new recipe: Emily Bites Bubble Up BBQ Chicken & Bean Bake. It was SO GOOD. To be honest, some of the “bubble up casseroles” are hit or miss for me, but this was b o m b.
