Taco Salad with Honey Lime Dressing


018 I am so excited that summer is almost here! I only have 2 more days of work and then I am on vacation! One of my favorite things to do during the summer is to grill out... And with Memorial Day just around the corner, I wanted to share some good summer recipes!

I leave the grilling to B, but I absolutely love coming up with sides... After making this over the weekend, I just knew I HAD to share it with y'all!


The ingredients aren't  anything crazy. Lettuce (I used romaine and iceberg), 1 avocado, 3 small cucumbers, and a pack of pico de gallo from your produce section. You can make your own pico de gallo, but who has time for that : )

I cube up the avocado while it's still in its skin, and then scoop it out with a spoon. This is so much easier.

I laid all the ingredients on top of the lettuce for presentation, but I would mix it all up before serving!

The dressing is also super simple... Juice of 2 limes, 1/3 cup olive oil, 2 TBS honey... Mix well... Add 1/4 tsp each of: Oregano, Salt, Pepper, Garlic Powder, Onion Powder...


The dressing is a perfect blend of sweet and tangy. You can add more or less seasonings to taste... The base of equal parts lime juice and oil is the base. The possibilities are endless!

This salad is so versatile. You could add corn or black beans, tortilla strips, cheese, or anything else! We ate it with grilled shrimp this weekend and it was such a good combination! Another idea is to use my Creamy Cilantro Sauce as your dressing. YUM!

Pizza Night!


TGIF... Seriously! This week has gone on and on... I am not one to wish time away, but I was happy to see this weekend. Anyway, tonight I wanted to treat me and B to something really good... Pizza!


I made the dough when I got home from work and let it rise until B got home. We are in a cold-snap in Georgia, so my kitchen was not really warm enough for it to rise very much, but it was good enough for me... I am very impatient. : ) Also, I woke up a little sore and I'm pretty sure it was from rolling out this dough.


Instead of buying pizza sauce, I bought a can of organic tomato sauce and added Italian spices to it. I don't care for a lot of sauce on my pizza, so I went pretty light...

B didn't get home until around 9:45, so it was a very late dinner for us... I had on my pajamas, my make up off and had been watching reality TV for few hours by the time we ate... Don't judge my life.


I topped the pizza with pepperoni, onion, green pepper, mozzarella cheese, and a swirl of olive oil! It was soooo good, y'all. For real. The crust was the perfect texture, the cheese melted beautifully and it had just the right amount of pizza sauce for my taste.

I love making special things for me and B... It's so fun to try new things!

Monday FunDay


Oh, Monday... Back to the grind. I woke up earlier than usual, which is very unlike me. My alarm hadn't even gone off yet, but I couldn't fall back asleep, so I took advantage of that time to do my quiet time and just get focused before the work week began.


I even got to make a really delish breakfast. I was planning to make a smoothie, but my bananas still aren't ripe. I ended up making a Camel's Eye + Toast made with homemade bread, eggs from a friend's chickens and all fruit spread! It was so good and kept me full until lunch.

It was a beautiful day today in Kindergarten... We are talking about Mother's Day this week, and thankfully the weather was so nice, we spent some extra time outside. It was just a good day.

Today was also Day 2 of my 10 Day Real Food Challenge. It went really well, and the only time I was really tempted was during that 4:00-6:00PM slump in between work and dinner. I will try to be better prepared the rest of the 10 days.

When I got home there was a surprise waiting for me under our carport... B ordered some birdseed from Amazon and I guess some squirrels found out and broke into the box! It was all over the floor of the carport, along with shreds of cardboard. It was hilarious, but it also made me a little mad... : )

For dinner I made a roasted chicken, mashed potatoes and spinach salad with honey mustard vinaigrette. I had never roasted a whole chicken before, so it was a little intimidating, but it was really very easy! And soooo delicious.


Maxx always begs for whatever we're eating... I swear. And I almost always give in... Look at that face! : )
